Poached Halibut With Fennel And Cauliflower

- 1½ lbs halibut (or tiliapia) cut into 8 pieces shopping list
- 1 TBS fresh lemon juice shopping list
- 1 cup + 1 TBS chicken or vegetable broth shopping list
- 1 medium sized onion cut in half and sliced medium thick shopping list
- 1 large carrot, turned about 1½ inch pieces shopping list
- 1½ cups small cauliflower florets about 1½ inch pieces shopping list
- 1 medium sized fennel bulb sliced medium thick shopping list
- 5 medium cloves garlic pressed shopping list
- salt and black pepper to taste shopping list
- chopped fennel green tops for garnish shopping list
How to make it
- Rub fish with lemon juice and season with a little salt and pepper. Set aside.
- Heat 1 TBS broth in a 12 inch stainless steel skillet. Healthy sauté onion in broth over medium heat for 5 minutes stirring frequently.
- Add rest of broth, carrots and cauliflower.
- Simmer on medium heat for about 10 minutes covered.
- Place fennel, garlic, salt, pepper and fish on top of vegetables and continue to cook covered for about 6 more minutes. Season with salt and pepper
- Serve fish with vegetables and broth. Sprinkle with chopped fennel greens.
- Rice would be a great side dish!
