Ingredients
  • 1 T olive oil
  • 2 med onions, chopped
  • 4 cloves garlic, minced
  • 2 4oz cans chopped green chiles
  • 4 cups chopped cooked chicken
  • 2 t ground cumin
  • 1.5 t dried oregano, crumbled
  • .25 t cayenne or crushed red pepper (depending on taste)
  • 3 16 oz cans, great northern beans, drained & rinsed
  • 6 cups chicken broth
  • 3 cups grated monterey jack cheese
  • salt
  • pepper
  • sour cream

Directions
  1. Heat oil in large heavy pot to med/high.
  2. Add onions & saute until translucent, about 10 minutes.
  3. Add garlic, chiles, chicken, cumin, oregano, and hot pepper.
  4. Saute 2 minutes.
  5. Add beans and chicken broth.
  6. Bring to a boil, reduce heat and simmer 2 hours or more.
  7. Add 1 cup of grated cheese.
  8. Stir until thick and melted.
  9. Season with salt & pepper. Serve with remaining cheese and sour cream.

Mmmm...gonna try it! I like to add a lot of cilantro to mine as well...if you like cilantro, try it!


HI, I just made this & it's wonderfull Unfortunately, I don't have any green chiles or other peppers on hand. I made a larger batch so I'll add them tomorrow. If this s like regular red chili that get's better the next day, all I can say is wow!!


Hi. I just made this for a bunch of guys. They all enjoyed it and cleaned out a double recipe! I used 4.25 pounds of chicken breasts and almost 2 pounds of jalepeno monteray jack. Thanks for the recipe! (I didn't try the cilantro but that would be a great addition.)

Made a double batch yesterday - it was a huge success. I added a few quartered potatoes, and some whole (canned) green chiles. Yum.

Great taste & texture. I used ground chiken to make things easy and used organic low sodium chicken broth. The family loved it! Makes enough for 2 meals.


Made it today for the Superbowl and it's DELICIOUS. I made it exactly as written. Adding the cheese at the end really made it.


This recipe is great! Great blend of flavors! Only thing is that one batch is not enough for 8 at our house. I took it for lunch at work, and the guys are begging me to make a batch for everyone at work. I'll be making a double batch.

Alterations


You might want to use low-sodium chicken broth. It can get a little salty. = )


For those who want to eliminate saltiness You can add 1/2 of a regular white potatoe (Or a whole cut in 1/2 & drop it in while it is a boil.This will absorb the salt, remove after 10-20 min. If you leave it in the soup & it gets cold the salt will be leach back into the pot!
