Corn bread battered pan fish

This dish makes a delicious meal that everyone will enjoy. Also makes for very good fish sandwiches
Ingredients
- 1/4 box of corn muffin mix shopping list
- 2tbs cajun seasoning shopping list
- 1tsp lemon pepper shopping list
- 2dozen fish filets shopping list
- 2tbs butter shopping list
How to make it
- poor 1/4 box corn muffin mix into mixing bowl
- add 2 tbs cajun seasoning, 1 tsp lemon pepper
- mix with hands till spices are evenly distributed
- batter each fillet evenly on both sides
- melt 2 tbs butter in large frying pan
- place fish in frying pan and cook until the batter is golden brown
- place on serving plate covered in paper towel to drain away excess butter
- and enjoy. its especially good with thousand island dressing
