Vegetable Soup

- onion cabbage broccoli cauliflower Red Green capsicum Chilli green beans zucchini carrots celery Sprouts eggplants leeks mushrooms shopping list
- Add different herbs in season eg oregano basil thyme shopping list
How to make it
- Dice all the vegetables into bite sized pieces
- Put all the vegetables in a large pot cover with water and stock
- Cook until just tender
- Add the herbs and more stock, tomato paste or tin /jar of tomatoes. Cook a further 5 minutes with lid on bring to a rapid boil turn off heat finishes off the cooking process and retains the goodness
