Fajita Beef Salad

- 2 cups tortilla chips, crushed shopping list
- 1 chopped tomato shopping list
- 1/2 cup red onion, thinly sliced shopping list
- 1/2 cup of corn kernels, fresh shopping list
- 1 dash of hot pepper sauce shopping list
- 1 (8 oz) bottle salad dressing, Italian-style shopping list
- 8 cups assorted salad greens shopping list
- 1/2 cup of cheddar cheese, shredded shopping list
- 1/2 cup cooked kidney beans shopping list
- 1/2 pound flank steak (cut into strips) shopping list
- 1 tspn cumin, ground shopping list
How to make it
- In a small bowl combine the hot pepper sauce, Italian dressing and cumin, mix well. (Set aside 1/2 cup of the dressing). Separately in a bowl, add enough dressing to lightly coat the beef and let marinate for approximately 1 hour.
- Fry the beef in a hot skillet and cook until completely done. Then allow the beef to cool down. In a medium-sized bowl mix up the beef with the beans, onions, corn and the 1/2 cup of dressing. You should refrigerate for several hours before you serve.
- Toss the beef and vegetable mixture with the shredded cheese, salad greens and tomatoes. Add extra dressing to taste, top with the crushed tortilla chips and serve.
