Baked Chillie Stuffed Potatoes Collins Style Recipe
baked potatoes cooked,cut in half scoop out the potatoe,fill with chillie mashed the potatoes,pipe back on the chillie,sprinkle with loads of your favorite cheese and rebake in hot oven for 10 to 15 mins.can me made early to eat later.

Ingredients
  • 4 medium potatoes scrub and bake
  • any chillie that you may have left or buy a tin from supermarket
  • as much as you like of your favorite grated cheese
  • 2oz butter
  • salt and pepper to season
  • 1 small egg

Directions
  1. bake the potatoes for about 40 min or till cooked
  2. when cooled split in half and scoop out the potatoe
  3. mash the scooped potatoe with butter and salt and pepper and egg ready to pipe
  4. fill the halves with the chillie,and put on a baking dish
  5. pipe the potatoe round the edge of each potatoe leaving a space in the middle
  6. pile the cheese in i love loads on
  7. cook in oven for 10 to 15 mins gas 6.just keep your eye on them
  8. this is my own recipe,the beauty is you can make it early to cook later
  9. when it`s cooked and golden serve up with some nice garlic bread.nice for the supper when you have been out for a drink or 2
