Ingredients
  • 3-4 lbs. rib or shoulder lamb chops
  • 1-2 lb. sweet onions, sliced thin
  • 1 lbs. red potatoes, sliced thin
  • 1 bay leaf
  • 1 tsp. thyme
  • 1 tsp. parsley
  • 10-15 oz. of chicken broth
  • 3 tbsp. butter or olive oil
  • 2 cloves garlic, crushed
  • Salt & pepper to taste

Directions
  1. Heat butter (or olive oil) in a pan.
  2. Brown chops on both sides (2 minutes per side).
  3. Sprinkle onions over chops.
  4. Add parsley, thyme and bay leaf.
  5. Scatter potatoes on top.
  6. Sprinkle with salt and pepper to taste.
  7. Pour broth over top and bring to a boil.
  8. Cover tightly, reduce heat and simmer 40 to 45 minutes until meat is tender and potatoes are soft.
  9. Can also be baked in oven-proof pan at 350 degrees for 45 minutes.
