Sauted Sweet Peppers Recipe
A quick pepper fry-up to add some color to your table. In the winter, use frozen peppers; in the summer, get them when they're fresh from market.

Ingredients
  • Sweet peppers (fresh or frozen). We used Trader Joes brand in March.
  • Garlic
  • Olive oil
  • Thyme

Directions
  1. Clean, seed, and chop the peppers into short strips. If using frozen peppers, you can let them thaw out a little bit.
  2. Slice the garlic into large pieces (thirds or quarters)
  3. Heat the olive oil in a pan until fragrant and hot.
  4. Saute the garlic until fragrant and hot, but not browned. You're trying to soften it up.
  5. Add the peppers. Stir and saute. Sprinkle thyme over the top.
  6. Cook until the peppers are soft, hot, and done.
