Vegetable Mushroom Fried Rice

- 2 cups brown rice (cooked – follow the package instruction) shopping list
- 1 medium carrot cut into cubes shopping list
- 1 cup chopped broccoli shopping list
- 1 cup chopped cauliflower shopping list
- 1 cup chopped beans shopping list
- 1 small red onion, chopped shopping list
- 1 can mushroom in oil shopping list
- 2 teaspoons olive or vegetable oil shopping list
- salt and pepper shopping list
How to make it
- 1. Heat 1 inch water to boiling in skillet. Add carrots, broccoli, cauliflower and beans. Heat to boiling; reduce heat to medium. Cook until crisp-tender; drain.
- 2.a Mixed Vegetables: Heat oil in skillet over medium heat. Cook onion in oil, stirring occasionally, until tender. Stir in brown rice, carrots, broccoli, cauliflower, beans and mushroom. Add salt and pepper to taste. Cook 1 minute, stirring occasionally. Remove mixture from heat; keep warm.
- 2.b Mushroom: Heat mushroom in oil in skillet over medium heat. Add onion, stirring occasionally, until tender. Stir in brown rice, add salt and pepper to taste. Cook 1 minute, stirring occasionally. Remove mixture from heat; keep warm.
- Serve warm.
