Gluten Free Butterscotch Crumb Apple Pie

- 7-10 apples- Granny Smith or similar tart baking apple shopping list
- 1 cup sugar shopping list
- 1/2 cup apple pie seasoning shopping list
- 2/3 cup gluten free flour mix (rice flour, tapioca flour, corn starch) shopping list
- 1 bag of butterscotch chips shopping list
- 1 stick of butter shopping list
- 1 cup (approx) of rice flour shopping list
- 1 pie shell- bottom only shopping list
How to make it
- Peel and chop apples
- add sugar and pie seasoning, mix well
- add gluten free flour mix, mix well
- pour in pie shell
- in a saucepan melt butter
- when butter is thoroughly melted, add butterscotch
- stir together until melted, remove from heat
- add rice flour, a little bit at a time, until the mixture forms a thick paste with some texture to the mouthfeel
- allow to cool to almost solid
- drizzle chunks over the pie filling, and spread to form the pie top
- bake at 375 for about an hour or until the crumb top is deep brown
