Gluten Free Butterscotch Crumb Apple Pie Recipe
A wonderful variation on the typical apple pie!

Ingredients
  • 7-10 apples- Granny Smith or similar tart baking apple
  • 1 cup sugar
  • 1/2 cup apple pie seasoning
  • 2/3 cup gluten free flour mix (rice flour, tapioca flour, corn starch)
  • 1 bag of butterscotch chips
  • 1 stick of butter
  • 1 cup (approx) of rice flour
  • 1 pie shell- bottom only

Directions
  1. Peel and chop apples
  2. add sugar and pie seasoning, mix well
  3. add gluten free flour mix, mix well
  4. pour in pie shell
  5. in a saucepan melt butter
  6. when butter is thoroughly melted, add butterscotch
  7. stir together until melted, remove from heat
  8. add rice flour, a little bit at a time, until the mixture forms a thick paste with some texture to the mouthfeel
  9. allow to cool to almost solid
  10. drizzle chunks over the pie filling, and spread to form the pie top
  11. bake at 375 for about an hour or until the crumb top is deep brown
