Turkey Jambalaya

- 3/4 pound boneless skinless turkey breasts, cut into bite sized pieces shopping list
- 12/3 cups unsalted chicken broth shopping list
- 11/2 cups uncooked rice shopping list
- 4 ounces smoked turkey sausage, diced shopping list
- 1 can (1 pound) unsalted tomatoes, crushed shopping list
- 1/2 cup thinly sliced celery (include leaves) shopping list
- 1/2 cup chopped green bell pepper shopping list
- 1/2 cup chopped onion shopping list
- 1 tsp crushed fresh garlic shopping list
- 1 bay leaf shopping list
- 1-2 tsp cajun or creole seasoning shopping list
How to make it
- 1. Coat large skillet with non-stick cooking spray, and preheat over med-high heat. Add turkey, and stir-fry for 2-3 minutes, or until browned if using holiday left overs.
- 2. Add the remaining ingredients to the skillet, and stir to mix well. Bring the mixture to a boil, reduce the heat to low, and cover. Simmer for about 50 minutes, or until liquid has been absorbed and the rice is tender.
- 5. Remove from heat, and allow to sit, covered for 5 minutes. Serve hot.
