How to make it

  • 1. Coat large skillet with non-stick cooking spray, and preheat over med-high heat. Add turkey, and stir-fry for 2-3 minutes, or until browned if using holiday left overs.
  • 2. Add the remaining ingredients to the skillet, and stir to mix well. Bring the mixture to a boil, reduce the heat to low, and cover. Simmer for about 50 minutes, or until liquid has been absorbed and the rice is tender.
  • 5. Remove from heat, and allow to sit, covered for 5 minutes. Serve hot.
