Grams Brown Bread Recipe
An antique bread recipe. This makes great sandwiches or is grate in chuncks with cheese and sausage. I've always loved this bread either fresh from the oven, or a week later.

Ingredients
  • 3 cups boiling water
  • 1 cup oatmeal
  • 2 to 4 cups cool water
  • 1 tsp salt
  • 2 TBS shortening
  • 3 yeast (dry packets)
  • 1/2 cup sugar
  • 3 TBS dark molasses
  • nut meats (chopped) (wallnuts, pecans, almonds, to your liking)
  • flour

Directions
  1. Pour 3 Cups boiling water over 1 cup oatmeal
  2. cool with 2 to 4 cups water
  3. add salt, shortening, yeast, sugar, molassas, and nut meats. Mix well
  4. add enough flour to make a hard loaf
  5. let rise
  6. shape into loaves, let rise again
  7. bake at 400 F for 10 min
  8. turn oven down to 350, bake an additional 50 min.
  9. remove from pans and cool on wire rack.
  10. (makes 3 to 4 loaves)
  11. dinner rolls
  12. bake in moderate oven untill brown.
  13. Notes:
  14. 1) this is as the recipe reads. (from my great grand mother)
  15. 2) The nuts are optional (I use 1 cup chopped walnuts).
  16. 3) I assume that step 2 is cooling the boiling water to 125 F+/-- for the yeast.
  17. 4) I usualy use about 4 pounds of flour (hard loaf) and this does need to be kneaded.
  18. 5) butter the loaf before letting rise the first time. cover the loaf with a light towl and let rise in a warm draft free place.
  19. 7) butter the pans
  20. 8) I assume moderate oven is 350 F to 375 F.
