How to make it

  • melt the chocolate down w a little water. set aside
  • whisk the egg whites till soft peaks form then add the second meassure of sugar gradually, whisking in between so its all thick and glossy and whatnot. set aside.
  • separate the eggs and pop 3 of the yolks and the whole egg in a saucepan with the 1st measure of sugar, and a little vanilla essence/seeds/w/e. whisk over low heat until smooth, then gradually add the milk, stirring continuously. add more milk if it seems too thick. it should be as runny as cream (unwhipped)
  • beat the 'custard' together with the chocolate, then fold in the egg white mixture. stir through this the juice and zest of the clementine.
  • put into a freezable container and freeze away until it's frozen
  • really good as a dessert, which was handy, because random rellies always come over to our house (although we live 2 hours away...). and it makes pretty fantastic icecream
  • if you were wondering what happened to the other 2 egg yolks?? well they went into the lemon curd, which turned out awesomely :P
