Kangaroo With Bbq Potato Slices

- 8cm piece of ginger shopping list
- 1 crushed clove garlic shopping list
- 2tblsp olive oil shopping list
- 600g Kangaroo fillets cut into 3cm pieces shopping list
- salt and pepper shopping list
- 600g baby chat potatoes shopping list
- pinch chilli flakes shopping list
- pinch dried fenugreek lraves shopping list
- juice of a lemon shopping list
- 2 tblsp parsley shopping list
- olive oil shopping list
- salt and pepper shopping list
- bamboo skewers soaked in water shopping list
How to make it
- Place potatoes in a pan of cold water bring to the boil. cook over med tom high about 5 mins until tender. Drain and cool, slice thickly lenghtways
- Grate 1/4 of ginger slice remaining ginger. Place grated ginger into large bowl with garlic,oil and kangaroo cubes. Mix season with salt and pepper put meat onto skewers add ginger after each 2nd cube set aside
- Heat bbq med high heat brush spuds with oil cook 1 to2 mins each side until crisp. Combine chilli, fenugreek,lemon juice and parsley in a bowl add spuds to the dressing and toss to coat season and cover loosely with foil. Cook skewers 1 min each side untill cooked
- Serve with warm spuds and green salad
