How to make it

  • Place potatoes in a pan of cold water bring to the boil. cook over med tom high about 5 mins until tender. Drain and cool, slice thickly lenghtways
  • Grate 1/4 of ginger slice remaining ginger. Place grated ginger into large bowl with garlic,oil and kangaroo cubes. Mix season with salt and pepper put meat onto skewers add ginger after each 2nd cube set aside
  • Heat bbq med high heat brush spuds with oil cook 1 to2 mins each side until crisp. Combine chilli, fenugreek,lemon juice and parsley in a bowl add spuds to the dressing and toss to coat season and cover loosely with foil. Cook skewers 1 min each side untill cooked
  • Serve with warm spuds and green salad
