How to make it

  • Heat oil in dutch oven over medium heat
  • saute onions 8-10 till golden and soft
  • add beef and pork, breaking up with back of spoon till just browned
  • drain fat
  • add guinness, bring to simmer 4-5 ins
  • add peppers, garlic, tomatoes, and all spices
  • mix well
  • add beans
  • bring to boil, reduce heat to low, and simmer 2-3 hours
  • I let it simmer on the stovetop for about 1.5 hours, then i had to run out, so i tossed it in the slowcooker on high for another couple of hours.

    I absolutely love this. All i do differently, is double the meat, use steaks and pork shoulder cut into cubes instead of ground meat, a second Guinness to compensate for all the extra chunks, and I also add fingerhot peppers for more heat. I have no idea where to find an anaheim pepper. My local grocery store has never heard of it nor have I but the recipe is great!

    My boyfriend and I have had this chili twice now and it hasn't failed, best chili Ive ever made! We like to add a few canned jalapenos and use spicy sausage for some extra kick!
    Plus, we loved the excuse to drink Guinness while cooking.

    With a love for comfort foods and an addiction to guiness I have to try this now that its starting to snow outside. I might try adding some Irish Whiskey to complement the cinnamon and brown sugar. Thanks for the recipe.
