Meatloaf with Bulgur

- 1 cup bulgur shopping list
- 1 cup of boiling water shopping list
- 1 tbsp of olive oil shopping list
- 1 onion, chopped shopping list
- 1 small chili pepper, minced (optional) shopping list
- 3 garlic cloves, minced (less if you don't like garlic) shopping list
- 2 lbs lean or extralean ground beef OR ground chicken shopping list
- 1 cup of cooked spinach squeezed dry, minced OR shopping list
- 1 cup of shredded carrots OR shopping list
- 1 cup of shredded cabbage shopping list
- (OR a combination of the above) shopping list
- 1/2 cup of plain breadcrumbs shopping list
- 1 tbsp of flaxseed (optional) shopping list
- 2 eggs OR 3 egg whites shopping list
- 1/2 tsp each of dried savory, oregano, marjoram shopping list
- salt & pepper to taste shopping list
How to make it
- Preheat oven to 375 F
- Combine bulgur and boiling water and let sit while assembling the rest of the ingredients
- In skillet, heat oil and add onion, chili pepper, garlic and sauté until soft.
- Drain bulgur and squeeze dry
- In large bowl, combine meat with bulgur, onion mixture and the rest of the ingredients
- Shape into loaf in a baking pan and bake for about 45 minutes or until juices run clear
- Let stand for about 10 minutes to set.
