Meatloaf With Bulgur Recipe
A hearty meatloaf with the addition of bulgur and veggies. Add some mashed potatoes or butternut squash, a side of snow peas or broccoli and you're done!

Ingredients
  • 1 cup bulgur
  • 1 cup of boiling water
  • 1 tbsp of olive oil
  • 1 onion, chopped
  • 1 small chili pepper, minced (optional)
  • 3 garlic cloves, minced (less if you don't like garlic)
  • 2 lbs lean or extralean ground beef OR ground chicken
  • 1 cup of cooked spinach squeezed dry, minced OR
  • 1 cup of shredded carrots OR
  • 1 cup of shredded cabbage
  • (OR a combination of the above)
  • 1/2 cup of plain breadcrumbs
  • 1 tbsp of flaxseed (optional)
  • 2 eggs OR 3 egg whites
  • 1/2 tsp each of dried savory, oregano, marjoram
  • Salt & pepper to taste

Directions
  1. Preheat oven to 375 F
  2. Combine bulgur and boiling water and let sit while assembling the rest of the ingredients
  3. In skillet, heat oil and add onion, chili pepper, garlic and sauté until soft.
  4. Drain bulgur and squeeze dry
  5. In large bowl, combine meat with bulgur, onion mixture and the rest of the ingredients
  6. Shape into loaf in a baking pan and bake for about 45 minutes or until juices run clear
  7. Let stand for about 10 minutes to set.
