How to make it

  • Scrub the potatoes, cut into 2 cm bits (they should be small enough that this means halving or quartering them) and boil until cooked. Leave to cool.
  • Quarter the tomatoes
  • Cut the feta into 1 cm cubes, or crumble it.
  • Slice the onion very thinly
  • Mix it all together with the aoli and leave for 1/2 an hour or so before serving.
