Chicken in spicy tomato sauce

- 1kg of chicken wings ( To be marinated with 1tbsp of tumeric powder, a pinch of salt and to be fried to half cook and set a side) shopping list
- 3 potatoes (sliced thick and fried set a side) shopping list
- 3 tbsp oil shopping list
- 2 big onion (paste) shopping list
- 4 cloves garlic (paste) shopping list
- 1.5cm ginger (paste) shopping list
- 1.5cm galangal (a ginger-like root) (bruise) shopping list
- 9cm lemon grass (bruise) shopping list
- 3 tbsp chilli paste (Can be bought at supermarket) shopping list
- 5 tbsp tomato ketchup shopping list
- Half a cup of water shopping list
- Half tbsp sugar shopping list
- And salt to taste shopping list
- green peas for garnishing shopping list
- Fried shallots for garnishing shopping list
How to make it
- Combine the paste ingredient together with the chilli paste.
- Heat oil on a pan sautee the paste ingredient , galangal and lemon grass until the paste ingredient cook and oil rise from the paste.
- Add the pre fried chicken and fried potatoes, mix well with the paste ingredient.
- Add the ketchup and water.
- Cook until the gravy thicken and chicken done.
- Finally add sugar and salt to taste.
- Garnish with peas and shallots.
