Baby Goat with Lemon and Potatoes

- 1 leg of a lamb approx. 1 1/2 kilo shopping list
- 1 cup lemon juice shopping list
- 1 cup dry white wine shopping list
- 3 tbs olive oil shopping list
- 4 cloves garlic (squashed) shopping list
- 2 cloves garlic in thin slices shopping list
- 3 sprigs of fresh thyme or 2 tbs dried shopping list
- 2 tbs dried oregano shopping list
- zest of 1/2 lemon or lime shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1 tbs peppercorns shopping list
- 1 kilo potatoes cut in wedges shopping list
How to make it
- Cut the meat in pieces and put it in a bowl with a cover.
- Rub the meat with the squashed garlic and sprinkle with salt, pepper, thyme and oregano.
- Add the wine, oil, lemon juice and zest. Mix well and cover the bowl. Refrigerate for at least 6 hours.
- Occasionaly stir the meat in order to marinate all of it well.
- Take the meat out of the bowl, make some incisions in various places and put garlic slices with peppercorns in each incision.
- Transfer the meat with the marinade and the potatoes in an oven dish and cook covered with aluminum foil for 30 mins. in 220 C.
- Take the aluminum foil off, and bake for 15 mins more, basting the meat with its juices.
