How to make it

  • Cut the meat in pieces and put it in a bowl with a cover.
  • Rub the meat with the squashed garlic and sprinkle with salt, pepper, thyme and oregano.
  • Add the wine, oil, lemon juice and zest. Mix well and cover the bowl. Refrigerate for at least 6 hours.
  • Occasionaly stir the meat in order to marinate all of it well.
  • Take the meat out of the bowl, make some incisions in various places and put garlic slices with peppercorns in each incision.
  • Transfer the meat with the marinade and the potatoes in an oven dish and cook covered with aluminum foil for 30 mins. in 220 C.
  • Take the aluminum foil off, and bake for 15 mins more, basting the meat with its juices.
