Baby Goat With Lemon And Potatoes Recipe
A Greek dish with lamb or even chicken marinated and then braised in lemon juice

Ingredients
  • 1 leg of a lamb approx. 1 1/2 kilo
  • 1 cup lemon juice
  • 1 cup dry white wine
  • 3 tbs olive oil
  • 4 cloves garlic (squashed)
  • 2 cloves garlic in thin slices
  • 3 sprigs of fresh thyme or 2 tbs dried
  • 2 tbs dried oregano
  • zest of 1/2 lemon or lime
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbs peppercorns
  • 1 kilo potatoes cut in wedges

Directions
  1. Cut the meat in pieces and put it in a bowl with a cover.
  2. Rub the meat with the squashed garlic and sprinkle with salt, pepper, thyme and oregano.
  3. Add the wine, oil, lemon juice and zest. Mix well and cover the bowl. Refrigerate for at least 6 hours.
  4. Occasionaly stir the meat in order to marinate all of it well.
  5. Take the meat out of the bowl, make some incisions in various places and put garlic slices with peppercorns in each incision.
  6. Transfer the meat with the marinade and the potatoes in an oven dish and cook covered with aluminum foil for 30 mins. in 220 C.
  7. Take the aluminum foil off, and bake for 15 mins more, basting the meat with its juices.
