Griddle Cakes

- 1/2 cup vanilla yogurt (fat free) shopping list
- 1 tsp fresh parsley (chopped) shopping list
- 2 eggs shopping list
- 1 onion shopping list
- 1/2 cup green bell pepper shopping list
- 1 1/4 cups biscuit baking mix shopping list
- 1/2 cup red bell pepper shopping list
- 1 tomato (small, diced) shopping list
- 1 tbsp vegetable oil shopping list
How to make it
- Using a medium bowl, mix together the yogurt and eggs with the biscuit baking mix.
- On medium heat, use a medium-sized skillet to heat the oil.
- Stir fry the onion, and the green and red bell peppers until it is tender and stir it into the batter.
- Use a frying pan (or griddle) and oil it lightly and put it on medium heat.
- Using a 1/4 cup for each pancake, transfer the batter on the griddle.
- Brown the pancake on each side. Serve it up hot and garnish it with parsley and tomatoes. Have a wonderful breakfast!
