GROUND CHICKEN AND VEGGIE LAYERS

- chicken LAYER: shopping list
- 1lb ground chicken, turkey or beef (raw) shopping list
- 1-2 eggs shopping list
- 1/2 large onion, diced & sauteed shopping list
- salt & pepper, to taste shopping list
- squash LAYER: shopping list
- 1 med. butternut squash (baked/steamed until soft or cubed) shopping list
- 1/2 large onion, diced & sauteed shopping list
- 2 T mayo (SCD homemade mayo) shopping list
- salt & pepper, to taste shopping list
How to make it
- Puree the squash layer and set aside in a bowl.
- Next, mix/puree the meat layer (if you're not weird about meat texture) and set aside in a separate bowl.
- Then, layer the meat mixture with the squash mixture alternately in greased glass pan: squash, chicken, squash.
- Bake at 350 degrees F for approximately 1 hour (when the meat layers are done).
