Tomato-Shrimp Salad

- 2 tablespoons chopped fresh parsley shopping list
- 6 tablespoons sherry vinegar shopping list
- 2 tablespoons extra virgin olive oil shopping list
- 1/4 teaspoon salt shopping list
- fresh ground pepper shopping list
- 2 garlic cloves minced shopping list
- 3/4 pound medium size cooked shrimp, shelled and deveined shopping list
- 2 cups diced tomato shopping list
- 1/2 cup chopped mild sweet onion shopping list
- 1/2 cup chopped green pepper shopping list
- 1/2 cup chopped red pepper shopping list
How to make it
- Combine the first 6 ingredients in a medium bowl
- Stir with a whisk until well blended
- Add the shrimp and remaining ingredients and toss gently
- Cover and chill 2-4 hours
