Ingredients
  • 1 cups whole wheat flour
  • 1cup pastry flour
  • • 2 teaspoons baking powder
  • • 1/2 teaspoon baking soda
  • • 1/2 teaspoon cinnamon
  • • 3 very ripe bananas, mashed
  • • 1/2 cup pure maple syrup
  • • 1 cup milk
  • • 1 teaspoon pure vanilla extract
  • • 1/3-1/2 cup dried cranberries

Directions
  1. Preheat oven to 350°F.
  2. In a large bowl, combine the flour, baking powder, baking soda, and cinnamon, and mix well. In a separate bowl, combine the mashed bananas, maple syrup, milk, vanilla extract, and dried cranberries, mixing well. Add the wet mixture to the dry mixture, stirring until just combined (if the batter seems too thick, add a little more milk).
  3. Pour the batter into a 9"x5" loaf pan (be sure to coat it first with nonstick cooking spray!) and bake for 45-50 minutes, until golden brown and a toothpick inserted in the center comes out clean.
