Kalamata Potatoes

- 1 tablespoon olive oil shopping list
- 4 small red potatoes cut to 1" cubes shopping list
- 6-8 katamata olives, pitted and coursely chopped shopping list
- 1/2 tablespoon basil, chopped shopping list
- fresh ground black pepper shopping list
How to make it
- Heat olive oil in skillet over medium heat.
- In a single layer, add potatoes and cook, stirring occasionally until they begin to brown. Be sure to scrape the bottom of the pan to loosen and incorporate the "potatoe bits".
- Stir in the olives and basil.
- Reduce the heat to the lowest setting.
- Stir, cover, and cook 5 minutes or until the potatoes are browned.
- Pepper to taste
