Macaroon lovers, these are easy, quick, delicious, gourmet, and especially flavorful with a cuppa good hot coffee! :)

Ingredients
  • 3 egg whites
  • 1 cup sugar
  • 1 cup grated coconut
  • 1 cup pecans, chopped
  • 1/2 teaspoon vanilla

Directions
  1. In mixer bowl, beat egg whites until stiff
  2. Add sugar slowly, beating constantly
  3. Add vanilla, coconut and nuts
  4. Drop batter from teaspoon onto a greased cookie sheet
  5. Bake at 325 degrees until lightly browned, about 20 minutes
