How to make it

  • Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add celery and onions; sauté until tender. Transfer to a serving bowl and set aside. Coat skillet with cooking spray; add margarine and place over medium heat until margarine melts.
  • Stir in rice and vermicelli; cook over medium heat until vermicelli is lightly browned, stirring frequently. Add water, sautéed celery and onions and remaining ingredients to rice mixture. Cover, reduce heat and simmer 15-20 minutes or until rice is tender and liquid is absorbed. Stir before serving.
  • Yield 7 servings. (1/2 cup serving)
