Quick Ham And Veggie Quiche

- 1 lb cooked ham, cubed shopping list
- 1 large zucchini squash, grated shopping list
- 1 large carrot, grated shopping list
- 1 large onion, diced shopping list
- 1 tbsp butter shopping list
- 1 tbsp vegetable oil shopping list
- 4 eggs shopping list
- 1/3 cup milk (can be substituted with 2 tbsp of sour cream and 1/4 cup of seltzer water) shopping list
- 1/3 cup of flour (substitute with soy or gluten flour if counting carbs!) shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 1 tbsp parsley (dry or fresh, chopped) shopping list
- 1 tbsp dill (dry of fresh, chopped) shopping list
- 1/4 cup shredded parmesan cheese shopping list
How to make it
- Preheat your oven to 425F
- In a large skillet melt butter with vegetable oil.
- Add vegetables, saute for 1-2 minutes, stirring occasionally.
- Add ham and saute for another 1-2 minutes.
- Add salt, pepper and herbs - I added 1 tbsp dry parsley and 1 tbsp dry dill.
- Cook for another minute or so.
- Beat the eggs with milk or sour cream mix, until you see them foaming a little.
- Add some salt and black pepper to the egg mix.
- Stir in flour.
- Fold the vegetable mix into a baking pan that is 2" deep.
- Pour the egg mix over the vegetables.
- Bake in the middle of the oven for 30 minutes.
- In the last 5-7 minutes, sprinkle parmesan cheese over the bake, and complete baking when cheese is golden-brown and bubbly.
