How to make it

  • Preheat your oven to 425F
  • In a large skillet melt butter with vegetable oil.
  • Add vegetables, saute for 1-2 minutes, stirring occasionally.
  • Add ham and saute for another 1-2 minutes.
  • Add salt, pepper and herbs - I added 1 tbsp dry parsley and 1 tbsp dry dill.
  • Cook for another minute or so.
  • Beat the eggs with milk or sour cream mix, until you see them foaming a little.
  • Add some salt and black pepper to the egg mix.
  • Stir in flour.
  • Fold the vegetable mix into a baking pan that is 2" deep.
  • Pour the egg mix over the vegetables.
  • Bake in the middle of the oven for 30 minutes.
  • In the last 5-7 minutes, sprinkle parmesan cheese over the bake, and complete baking when cheese is golden-brown and bubbly.
