Potato-topped Chili Loaf

- 1 egg shopping list
- 3 T milk shopping list
- 3/4 cup finely chopped onion shopping list
- 1 can (4 oz) chopped green chilies shopping list
- 1/3 cup crushed saltines (about 10 crackers) shopping list
- 4 1/2 tsp chili powder shopping list
- 3/4 tsp salt shopping list
- 1 1/2 lbs ground beef shopping list
- 3 cups hot mashed potatoes (prepared with milk and butter) shopping list
- 1 can (11 oz) mexicorn, drained shopping list
- 1/4 cup thinly sliced green onions shopping list
- 1/2 to 1 cup shredded cheddar cheese shopping list
How to make it
- In a bowl, combine the first seven ingredients. Crumble beef over the mixture and mix well. Pat into a greased 9-inch square baking dish. Bake, uncovered, at 375F for 55-60 minutes or until meat is no longer pink and a meat thermometer reads 160F. In a bowl, combine the potatoes, corn and onions; mix well. Spread over meat loaf. Sprinkle with cheese. Broil 6 inches from the heat for 3-5 minutes or until lightly browned.
