Southwest Skillet

- 1 lb ground beef shopping list
- 3/4 cup chopped onion shopping list
- 1 can (16 oz) kidney beans, rinsed and drained shopping list
- 1 can (14 1/2 oz) diced tomatoes, undrained shopping list
- 1/2 cup uncooked instant rice shopping list
- 1/2 cup water shopping list
- 3 T chopped green pepper shopping list
- 1 1/2 tsp chili powder shopping list
- 1/2 tsp garlic salt shopping list
- 1/2 tsp salt shopping list
- 1 cup corn chips shopping list
- 3/4 cup shredded cheddar cheese shopping list
How to make it
- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add beans, tomatoes, rice, water, green peppers and seasonings; mix well. Bring to a boil. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. Remove from the heat. Sprinkle with the corn chips and cheese. Cover and let stand for 3 minutes or until cheese is melted.
