Ingredients
  • 1 pkg. (16 oz.) rigatoni
  • 2 eggs
  • 1 container (15 oz.) ricotta cheese
  • 3/4 cup (3 oz.) grated parmesan cheese
  • 1 tbsp. dried parsley
  • 2 jars (26 oz. each) marinara pasta sauce, divided
  • 3 cups (12 oz.) shredded mozzarella cheese, divided

Directions
  1. Preheat oven to 375F
  2. Spray 13x9x2 inch baking pan with nonstick cooking spray
  3. Cook rigatoni according to package directions; drain
  4. In small bowl, beat eggs
  5. Stir in ricotta, parmesan and parsley
  6. Layer in the following order:
  7. 2 cups marinara sauce; spread to cover bottom of pan
  8. Half of cooked rigatoni over sauce
  9. Top with half of ricotta mixture, dropped by spoonfuls
  10. 1 cup mozzarella
  11. 2 cups marinara sauce
  12. Remaining rigatoni and ricotta mixture
  13. Top with 1 cup mozzarella, remaining marinara sauce and remaining 1 cup mozzarella
  14. Bake covered with foil until bubbly, approximately 60-70 minutes
  15. Uncover and continue cooking about 5 minutes or until cheese is melted
  16. Let stand 15 minutes before serving
