How to make it

  • Preheat oven to 375F
  • Spray 13x9x2 inch baking pan with nonstick cooking spray
  • Cook rigatoni according to package directions; drain
  • In small bowl, beat eggs
  • Stir in ricotta, parmesan and parsley
  • Layer in the following order:
  • 2 cups marinara sauce; spread to cover bottom of pan
  • Half of cooked rigatoni over sauce
  • Top with half of ricotta mixture, dropped by spoonfuls
  • 1 cup mozzarella
  • 2 cups marinara sauce
  • Remaining rigatoni and ricotta mixture
  • Top with 1 cup mozzarella, remaining marinara sauce and remaining 1 cup mozzarella
  • Bake covered with foil until bubbly, approximately 60-70 minutes
  • Uncover and continue cooking about 5 minutes or until cheese is melted
  • Let stand 15 minutes before serving

    I made this for dinner tonight,loved it but now I need to assign a caloric value for a serving. The two of us each ate a generous serving accompanied with mild Italian sausage, green salad & chilled Chardonnay. We had lots of leftovers so tomorrow we're taking about half to friends. (This recipe would feed 10!) Thanks for posting this one, it's easy to make and turned out super.
