Salmon With HorseradishApple Glaze Recipe
This quick dish makes use of that half empty jar of apple jelly in the back of the fridge. Best served with a neutral rice.

Ingredients
  • 1 TBSP vinegar (Champagne prefered)
  • 1 TBSP chives, finely chopped
  • 2 TBSP prepared horseradish
  • 1/3 cup Apple Jelly
  • 1/2 tsp Kosher salt (divided)
  • 4 Salmon Filets (about 6-oz each), skinned
  • 1/4 tsp. black pepper
  • 2 tsp. olive oil

Directions
  1. Prehear oven to 350
  2. Combine first 4 ingredients and 1/4 tsp salt and stir well.
  3. Sprinkle Salmon with 1/4 tsp pepper and 1/4 tsp salt.
  4. Heat oil in a large nonstick skillet over medium heat. Add salmon, and cook 3 minutes. Turn salmon over, brush with half of apple mix.
  5. Wrap handle of skillet in foil and place in oven at 350 for 5 minutes or til fish flakes easily when tested with a fork.
  6. Brush salmon with remaining apple mixture, plate and serve.
