Creamy Cheese Mashed Potatoes

- 2 lbs. (about 6 medium) potatoes, peeled and cut into 1 inch chunks shopping list
- 3/4 cup evaporated milk shopping list
- 1/4 cup (1/2 stick) butter or margarine shopping list
- 1 cup (4 oz.) shredded cheddar cheese shopping list
- salt and ground black pepper, to taste shopping list
How to make it
- Place potatoes in a large saucepan
- Cover with water
- Bring to a boil
- Cook over medium-high heat for 15-20 minutes, or until tender
- Drain
- Return potatoes to saucepan
- Add evaporated milk and butter
- Beat with mixer until smooth
- Stir in cheese
- Season with salt and pepper, to taste
- ***Chopped green onions, chopped parsley or cooked, crumbled bacon may be added o mashed potatoes.
