Ingredients
  • 1 tbsp. olive oil
  • 4 or 1 1/4 lb. boneless, skinless chicken breast halves, pounded
  • 1 3/4 cups water
  • 1 tbsp. dry red wine (optional)
  • 1 pkg. vegetable soup/dip recipe mix
  • 2 tbsp. thinly sliced basil leaves
  • 1/4 cup milk

Directions
  1. In 12 inch nonstick skillet, heat olive oil over medium-high heat and brown chicken about 8 minutes, turning once
  2. Remove chicken and set aside
  3. Into skillet, add water, wine soup mix and 1 tbsp. basil
  4. Bring to a boil over high heat
  5. Reduce heat to low and immer uncovered, stirring occasionally for 5 minutes
  6. Stir in milk
  7. Return chicken to skillet
  8. Simmer covered for 2 minutes or until chicken is no longer pink
  9. Sprinkle with remaining basil and serve
  10. Serve with toasted italian bread, if desired
  11. Variations: Try topping each chicken breast with 1 slice prosciutto-stuffed mozzarella or fresh mozzarella during the last 2 minutes of cooking.
