Primavera 3 Cheese Pasta

- 1 lb. penne pasta shopping list
- 1 medium onion, diced shopping list
- 1 tbsp. oive oil shopping list
- 3/4 cups water shopping list
- 2 cups broccoli florets shopping list
- 2 cans (15.5 oz.) diced tomatoes shopping list
- 1 can (6 oz.) italian tomato paste with roasted garlic shopping list
- 1 tub (15 oz.) ricotta cheese shopping list
- 8 oz. mozzarella cheese, shredded shopping list
- 1/2 cup shredded parmesan cheese shopping list
How to make it
- Cook pasta according to package directions and drain
- In large skillet, cook onions in oil for about 5 minutes
- Stir in broccoli, water, undrained diced tomatoes and tomato paste
- Simmer for about 3 minutes
- Combine sauce and ricotta cheese in a large bowl
- Add pasta and toss
- Spoon into oiled 3 quart baking dish and sprinkle with mozzarella and parmesan cheeses
- Bake in preheated 350F oven for about 25 minutes or until hot and cheeses are melted
- Garnish with fresh basil, if desired
