Speedy Stroganoff Skillet Dinner

Ingredients
  • 1/4 cup chopped mushrooms
  • 1/4 cup diced onions
  • 1 diced pimento
  • 1 diced tomato
  • 1 cup instant rice
  • 2 tbsp. butter or margarine
  • 2 1/4 cups beef broth or consomme
  • Sour cream
  • parsley for garnish
  • 2 cups cooked beef, chopped
  • 1 tbsp. ketchup

Directions
  1. Saute mushrooms, onions, pimento and rice in butter until rice is golden brown
  2. Stir in broth or consomme and beef
  3. Simmer uncovered for 5 minutes, stirring occasionally
  4. Add sour cream and ketchup
  5. Heat but do not boil
  6. Garnish with parsley, if desired
