Sherry Apple Pork Recipe
This is by far the best tenderloin I've ever made! The sweetness imparted from the apple is quite different from what is typically expected in a pork recipe. You will love it!

  • INGREDIENTS:
  • 2 1/2 lbs pork tenderloin
  • 1/2 cup soy sauce
  • 1/2 cup sherry, dry
  • 3 minced garlic cloves
  • 1/8 tsp mustard powder (to taste)
  • 2 Tbsp minced ginger root, fresh
  • 1/8 tsp thyme, dried
  • 1 Tbsp soy sauce
  • 3/4 cup apple jam/jelly
  • 2 Tbsp sherry, dry

Directions
  1. DIRECTIONS:
  2. 1. With the desired amount, to taste, rub meat with thyme and mustard powder. In a non-reactive dish, add the pork, 1/2 cup of soy sauce, 1/2 cup of sherry, ginger and garlic. Thoroughly coat the pork loin and cover dish. Refrigerate overnight.
  3. 2. Preheat your oven to a temperature of 325 degrees F (165 degrees C).
  4. 3. Bake at 325 degrees F (165 degrees C) for 25 mins. per lb. or until internal temperature reaches 160 degrees F (70 degrees C). Occasionally, baste the pork during cooking.
  5. 4. In a small saucepan, heat the apple jam/jelly over medium heat while the pork is still cooking. Add 1 Tbsp of soy sauce and 2 Tbsp of dry sherry. Thoroughly stir mixture, reduce heat to low and let simmer. Pour over the tenderloin when it's done.
