Vinegar Potatoes Recipe
This is a dish my grandmother passed down to my mom. It's an acquired taste—if you didn't grow up eating, you may not like it. But if you like salt and vinegar potato chips, this is the mashed potato version, so give it a shot!

Ingredients
  • 4 medium potatoes, peeled and sliced
  • 1 small onion, diced
  • sprig of salt
  • 1 tablespoon cooking oil
  • apple cider vinegar to taste
  • 2 hard boiled eggs (chopped)

Directions
  1. Boil potatoes, onion, salt and oil in just enough water to cover. (You won't be draining).
  2. When tender, mash with potato masher.
  3. Stir in eggs.
  4. Add vinegar to taste.
  5. Best if left a little bit soupy.
  6. Enjoy!

I love vinegar I can't think of one that I don't like. Plus, I am a huge fan of fish and chips with vinegar and have you ever tried it on spinach, YUM. Thank you for sharing, great post.
