How to make it

  • Rinse scallops and pat dry. In resealable plastic bag combine flour and cajun seasoning. Add scallops; seal and toss to coat.
  • In large skillet cook scallops in oil about 6 min. on med heat. Cook until brown. Turning to brown all sides. Remove from skillet and keep warm
  • Add rice and pineapple to skillet. Cook until heated through, stir occasionally, scraping up any browned bits in pan. Stir in cilantro.
  • Serve scallops over rice.
