Scallops with Pineapple Rice

- 1 lb. sea scallops shopping list
- 2 TBSP all-purpose flour shopping list
- 1 1/2 tsp cajun seasoning shopping list
- 1 TBSP vegie oil shopping list
- 2 1/2 cups cooked rice shopping list
- 1 8 oz. can crushed pineapple drain as good as you can shopping list
- 1 TBSP chopped cilantro shopping list
How to make it
- Rinse scallops and pat dry. In resealable plastic bag combine flour and cajun seasoning. Add scallops; seal and toss to coat.
- In large skillet cook scallops in oil about 6 min. on med heat. Cook until brown. Turning to brown all sides. Remove from skillet and keep warm
- Add rice and pineapple to skillet. Cook until heated through, stir occasionally, scraping up any browned bits in pan. Stir in cilantro.
- Serve scallops over rice.
