Scallops With Pineapple Rice Recipe
Another family favorite, the scallops are spicey but the rice is sweet it's a great combination.

Ingredients
  • 1 lb. sea scallops
  • 2 TBSP all-purpose flour
  • 1 1/2 tsp cajun seasoning
  • 1 TBSP vegie oil
  • 2 1/2 cups cooked rice
  • 1 8 oz. can crushed pineapple drain as good as you can
  • 1 TBSP chopped cilantro

Directions
  1. Rinse scallops and pat dry. In resealable plastic bag combine flour and cajun seasoning. Add scallops; seal and toss to coat.
  2. In large skillet cook scallops in oil about 6 min. on med heat. Cook until brown. Turning to brown all sides. Remove from skillet and keep warm
  3. Add rice and pineapple to skillet. Cook until heated through, stir occasionally, scraping up any browned bits in pan. Stir in cilantro.
  4. Serve scallops over rice.
