Latin-Style Seafood Pasta Beans

- 4 ounces Barilla Plus penne shopping list
- 1 tablespoon extra virgin olive oil shopping list
- 2 teaspoons minced garlic shopping list
- 4 ounces crimini, chopped shopping list
- 1/2 poblano pepper, sliced shopping list
- 2 stalks green onion, sliced shopping list
- 4 ounces medium shrimp shopping list
- 4 ounces bay scallops shopping list
- 1 cup canned red beans shopping list
- 1/2 teaspoon red pepper flakes shopping list
- 1 teaspoon cumin, ground shopping list
- 1 tablespoon lime juice shopping list
- 2 tablespoons parmesan cheese, grated shopping list
- 1 tablespoon cilantro, chopped shopping list
How to make it
- Cook pasta according to directions on package. Drain pasta, reserving 1/4 cup of liquid, and set aside.
- Meanwhile, heat olive oil in large skillet or wok over medium heat. Add minced garlic and saute for one minute. Add crimini, poblano pepper, and green onion; saute for another minute. Add shrimp and scallops, saute until shrimp are pink. Add beans, red pepper, cumin, lime juice, and reserved pasta liquid; cook for about 2 minutes or until beans are heated through. Remove from heat and add penne, Parmesan, and cilantro; stirring to combine well. Serve immediately.
