Ingredients
  • 4 ounces Barilla Plus Penne
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons minced garlic
  • 4 ounces crimini, chopped
  • 1/2 poblano pepper, sliced
  • 2 stalks green onion, sliced
  • 4 ounces medium shrimp
  • 4 ounces bay scallops
  • 1 cup canned red beans
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon cumin, ground
  • 1 tablespoon lime juice
  • 2 tablespoons Parmesan cheese, grated
  • 1 tablespoon cilantro, chopped

Directions
  1. Cook pasta according to directions on package. Drain pasta, reserving 1/4 cup of liquid, and set aside.
  2. Meanwhile, heat olive oil in large skillet or wok over medium heat. Add minced garlic and saute for one minute. Add crimini, poblano pepper, and green onion; saute for another minute. Add shrimp and scallops, saute until shrimp are pink. Add beans, red pepper, cumin, lime juice, and reserved pasta liquid; cook for about 2 minutes or until beans are heated through. Remove from heat and add penne, Parmesan, and cilantro; stirring to combine well. Serve immediately.
