How to make it

  • Cook pasta according to directions on package. Drain pasta, reserving 1/4 cup of liquid, and set aside.
  • Meanwhile, heat olive oil in large skillet or wok over medium heat. Add minced garlic and saute for one minute. Add crimini, poblano pepper, and green onion; saute for another minute. Add shrimp and scallops, saute until shrimp are pink. Add beans, red pepper, cumin, lime juice, and reserved pasta liquid; cook for about 2 minutes or until beans are heated through. Remove from heat and add penne, Parmesan, and cilantro; stirring to combine well. Serve immediately.
