creamy leek and potato soup

- 2-3 leeks shopping list
- 3 cloves of garlic shopping list
- 8 potatos shopping list
- small tub of heavy cream shopping list
- spring onions shopping list
- 2 shallots shopping list
- about a pint and a half of veg stock shopping list
- a handful of small pasta shopping list
- fresh chives shopping list
- salt and pepper to taste shopping list
How to make it
- Chop the potatos into small pieces and boil half of them in the stock for 10-15 mins save the other half for later
- meanwhile slice the shallots and spring onion and fry for 3-4 mins until soft
- when the potato's are soft put in a blender with the stock and blend until smooth,then add half of the cream and the mix of spring onions and shallots blend again until mixed in
- put the smooth mix into a large enough pan on a mediem heat until bubbling then turn to a low heat
- add the pasta,crushed garlic and the fresh chives(chopped) the remaining potato and sliced leeks
- cook for about 30 mins until the pasta is soft and the potato pieces are cooked
- add more cream if needed,add salt and pepper and serve
