How to make it

  • Chop the potatos into small pieces and boil half of them in the stock for 10-15 mins save the other half for later
  • meanwhile slice the shallots and spring onion and fry for 3-4 mins until soft
  • when the potato's are soft put in a blender with the stock and blend until smooth,then add half of the cream and the mix of spring onions and shallots blend again until mixed in
  • put the smooth mix into a large enough pan on a mediem heat until bubbling then turn to a low heat
  • add the pasta,crushed garlic and the fresh chives(chopped) the remaining potato and sliced leeks
  • cook for about 30 mins until the pasta is soft and the potato pieces are cooked
  • add more cream if needed,add salt and pepper and serve
