How to make it

  • First boil the broccoli and potato in the chicken stock until soft
  • meanwhile fry the shallot until soft and translusent
  • put all of the ingredients(including the stock) into a blender and wizz until smooth
  • then break up the cheese and add to the mix with half of the cream and blend again
  • put the smooth mixture in a big enough pan and heat gentaly
  • whilst the soup is cooking fry the bacon pieces until golden and crispy
  • when everything is ready ladle into bowls add a dolop of Crème fraîche to each one and sprinkle the bacon ontop
