Mushroom Pasta Recipe
A simple mushroom pasta recipe from the Naked Chef, this preparation brings out the very best in mushrooms with a little garlic, lemon, and spice from dried chilies.

Ingredients
  • 9-11 oz mushrooms (any varieties you like)
  • 3 Tbsp olive oil
  • 1 clove of garlic, finely chopped or pressed
  • 1-2 small dried red chilies, crushed
  • salt and freshly ground pepper
  • juice of 1/2 lemon
  • 1 lb farfalle pasta
  • a small handful of grated parmesan cheese
  • a handful of fresh flat-leaf parsley, roughly chopped
  • 2 oz unsalted butter

Directions
  1. Brush mushrooms to clean off any dirt and slice thinly.
  2. Cook pasta until al dente.
  3. Meanwhile, heat olive oil in a medium-sized frying pan and add mushrooms. Let them fry fast, tossing once or twice, add the garlic and chili with a pinch of salt, and continue to fry for 4-5 minutes, tossing regularly. Remove from heat, add lemon juice, and season with salt and pepper to taste.
  4. Toss pasta with the mushroom sauce, butter, parmesan, and parsley.
  5. Garnish with a little extra parmesan and parsley and serve.
