Mushroom Pasta

- 9-11 oz mushrooms (any varieties you like) shopping list
- 3 Tbsp olive oil shopping list
- 1 clove of garlic, finely chopped or pressed shopping list
- 1-2 small dried red chilies, crushed shopping list
- salt and freshly ground pepper shopping list
- juice of 1/2 lemon shopping list
- 1 lb farfalle pasta shopping list
- a small handful of grated parmesan cheese shopping list
- a handful of fresh flat-leaf parsley, roughly chopped shopping list
- 2 oz unsalted butter shopping list
How to make it
- Brush mushrooms to clean off any dirt and slice thinly.
- Cook pasta until al dente.
- Meanwhile, heat olive oil in a medium-sized frying pan and add mushrooms. Let them fry fast, tossing once or twice, add the garlic and chili with a pinch of salt, and continue to fry for 4-5 minutes, tossing regularly. Remove from heat, add lemon juice, and season with salt and pepper to taste.
- Toss pasta with the mushroom sauce, butter, parmesan, and parsley.
- Garnish with a little extra parmesan and parsley and serve.
