Ingredients

9-11 oz mushrooms (any varieties you like)

3 Tbsp olive oil

1 clove of garlic, finely chopped or pressed

1-2 small dried red chilies, crushed

salt and freshly ground pepper

juice of 1/2 lemon

1 lb farfalle pasta

a small handful of grated parmesan cheese

a handful of fresh flat-leaf parsley, roughly chopped

2 oz unsalted butter

Directions

Brush mushrooms to clean off any dirt and slice thinly.

Cook pasta until al dente.

Meanwhile, heat olive oil in a medium-sized frying pan and add mushrooms. Let them fry fast, tossing once or twice, add the garlic and chili with a pinch of salt, and continue to fry for 4-5 minutes, tossing regularly. Remove from heat, add lemon juice, and season with salt and pepper to taste.

Toss pasta with the mushroom sauce, butter, parmesan, and parsley.

Garnish with a little extra parmesan and parsley and serve.
