Mesquite Brisket Recipe
This mesquite brisket is full of flavor and sure to please. The amount of servings it yields makes it great for a party. My family's always asking for it!

Ingredients
  • 8 lbs beef brisket
  • 1/4 cup Greek-style seasoning
  • 15 peeled garlic cloves

Directions
  1. Make deep cuts into the brisket with a knife. Place your peeled cloves all the way into the cuts you made. Sprinkle the brisket with a good amount of Greek seasoning.
  2. Place some mesquite wood over gray and hot charcoals.
  3. Place the fat side of the brisket down on the grill. Leave it to smoke for 2 hours, without turning.
  4. After it's done smoking, take the meat out and tightly wrap it 2 times in extra heavy aluminum foil. Now, place it in the oven on a cookie sheet for 2 hours at 250 degrees F.
  5. After the 2 hours, remove the brisket from oven and let it sit for 30 minutes to 1 hour (still in the foil) before serving. This lets the meat "firm up" and allows the juice to be absorbed.
