Mesquite Brisket

- 8 lbs beef brisket shopping list
- 1/4 cup Greek-style seasoning shopping list
- 15 peeled garlic cloves shopping list
How to make it
- Make deep cuts into the brisket with a knife. Place your peeled cloves all the way into the cuts you made. Sprinkle the brisket with a good amount of Greek seasoning.
- Place some mesquite wood over gray and hot charcoals.
- Place the fat side of the brisket down on the grill. Leave it to smoke for 2 hours, without turning.
- After it's done smoking, take the meat out and tightly wrap it 2 times in extra heavy aluminum foil. Now, place it in the oven on a cookie sheet for 2 hours at 250 degrees F.
- After the 2 hours, remove the brisket from oven and let it sit for 30 minutes to 1 hour (still in the foil) before serving. This lets the meat "firm up" and allows the juice to be absorbed.
