Spinach And Pine Nut Meatloaf Recipe
This is a great variation to the classic meatloaf. If you love spinach and beef you will love this. It's great with mashed potatoes and mac n cheese!

Ingredients
  • 1 1/2 pounds lean ground beef
  • 1/4 cup pine nuts (you can replace with any nut!)
  • 1 cup milk
  • 1 tbs worchestershire sauce
  • 2 tsp chopped fresh basil leaves (1/2 tsp dried basil leaves)
  • 1/2 tsp salt
  • 1/2 tsp ground mustard
  • 1/4 tsp pepper
  • 1 garlic clove, finely chopped (1/8 tsp garlic powder)
  • 1 egg
  • 3 slices of bread, torn into small pieces
  • 1 chopped onion, about 1/4 cup
  • 1 pkg frozen chopped spinach (drained) or 10 oz fresh (broken)

Directions
  1. Heat oven to 350
  2. mix all ingredients
  3. put into ungreased loaf pan
  4. bake an hour to an hour and 15 mins. (160 degrees)
