Tofu Scramble

- splash of olive oil shopping list
- 1 pound firm tofu, crumbled shopping list
- pepper to taste shopping list
- curry mushroom Version shopping list
- 1/2 medium onion, chopped shopping list
- 4-5 mushrooms, sliced shopping list
- 1 to 2 teaspoons curry powder shopping list
- salsa to taste shopping list
- 2 stalks green onion, chopped shopping list
- Greek Version shopping list
- 1 to 2 tablespoons soy sauce shopping list
- turmeric (to taste) shopping list
- dried oregano (to taste) shopping list
- 6-8 Greek olives shopping list
- handful of sun-dried tomatoes, chopped shopping list
- 1/2 cup spinach shopping list
How to make it
- If you are making the Curry Mushroom Version, start by adding onions & mushrooms to a splash of oil, and saute on medium until translucent.
- With both versions, crumble tofu into pan and add pepper.
- Add curry, or soy sauce and seasonings and saute for 10-12 minutes
- Add the rest and scramble on high for 2-4 minutes.
- Obviously, you could also throw in any cooked veggies you have on hand..
