Tomato Leek and Carrot soup

- 2 leeks shopping list
- 1 lb pkg of baby carrots shopping list
- 4 tbsp of unsalted butter shopping list
- 2 lbs plum tomatoes, chopped shopping list
- 1 1/2 cups of tomato juice shopping list
- 4 cups chicken broth shopping list
- 1/2 tsp thyme shopping list
- sour cream (optional) shopping list
How to make it
- Saute leeks and baby carrots in butter over medium heat for 5 mins untill softened.
- Add tomatoes, tomato juice, chicken broth and thyme.
- Simmer, covered, for 20 mins.
- Puree in a blender
- Serve with sour cream if desired.
