Farmstand Frittata

- 1 med. red bell pepper; seeded & cut into strips shopping list
- 1/2c. chopped onion shopping list
- 1c. broccoli florets; blanched & drained shopping list
- 1c. red potatoes; unpeeled, cooked & quartered shopping list
- 1c. egg substitute shopping list
- 6 egg whites shopping list
- 1T. chopped fresh parsley shopping list
- 1/2t. salt shopping list
- 1/4t. pepper shopping list
- 1/2c. 2% milk shredded cheddar cheese shopping list
How to make it
- Spray large, oven-proof, non-stick skillet with canola cooking spray/
- Heat over med. heat until hot.
- Add red pepper strips & onion and cook until crisp-tender. (approx. 3 min.)
- Add broccoli & potatoes, cook & stir 1-2 more minutes.
- Whisk together: egg substitue, egg whites, parsley, salt & black pepper.
- Spread vegetables in even layer in skillet and pour egg mixture over veggies.
- Cover & cook over med. heat 10-12 min. or until egg mixture is set.
- Meanwhile, preheat broiler.
- Sprinkle cheese over fritatta.
- Broil 4" from heat for 1 min. or until cheese is bubbly & golden brown.
- Cut into 4 wedges.
