How to make it

  • Spray large, oven-proof, non-stick skillet with canola cooking spray/
  • Heat over med. heat until hot.
  • Add red pepper strips & onion and cook until crisp-tender. (approx. 3 min.)
  • Add broccoli & potatoes, cook & stir 1-2 more minutes.
  • Whisk together: egg substitue, egg whites, parsley, salt & black pepper.
  • Spread vegetables in even layer in skillet and pour egg mixture over veggies.
  • Cover & cook over med. heat 10-12 min. or until egg mixture is set.
  • Meanwhile, preheat broiler.
  • Sprinkle cheese over fritatta.
  • Broil 4" from heat for 1 min. or until cheese is bubbly & golden brown.
  • Cut into 4 wedges.
