Cassava Pone Recipe
This is a West Indian favourite, it is also known as Heavy cake in The Cayman Islands and is always great when it comes out of the oven

Ingredients
  • 2lbs grated cassava
  • 2lbs brown sugar
  • 4 cups coconut milk or cream
  • 2TBS corn starch
  • 2tsps vanilla
  • 1 stick butter(melted)

Directions
  1. mix all together and place in a greased 9x13 baking pan and bake at 350 degrees for 1 hour or until knife comes out clean when stuck in the center
