Ingredients
  • 1 medium onion, diced
  • 1 tbsp. vegetable oil
  • 2 tbsp. sugar
  • 1/4 cup water
  • 1 1/2 cups burgandy wine, or other dry red wine
  • 4 cups chicken stock
  • three cloves garlic, finely minced
  • 1 cup dried shitake mushrooms, coarsely broken with your hands
  • 2 bay leaves
  • salt and pepper

Directions
  1. Saute onions in olive oil over medium-high heat until softened and lightly browned.
  2. Season with salt and pepper.
  3. Add water and sugar.
  4. Cook, stirring, until water is almost gone and sugar has carmelized.
  5. Add wine all at one and bring to a boil.
  6. Pour in broth, add mushrooms, garlic, and bay leaves.
  7. Stir and allow to boil until reduced by about half.
