Melting Pot Coq Au Vin Fondue

- 1 medium onion, diced shopping list
- 1 tbsp. vegetable oil shopping list
- 2 tbsp. sugar shopping list
- 1/4 cup water shopping list
- 1 1/2 cups burgandy wine, or other dry red wine shopping list
- 4 cups chicken stock shopping list
- three cloves garlic, finely minced shopping list
- 1 cup dried shitake mushrooms, coarsely broken with your hands shopping list
- 2 bay leaves shopping list
- salt and pepper shopping list
How to make it
- Saute onions in olive oil over medium-high heat until softened and lightly browned.
- Season with salt and pepper.
- Add water and sugar.
- Cook, stirring, until water is almost gone and sugar has carmelized.
- Add wine all at one and bring to a boil.
- Pour in broth, add mushrooms, garlic, and bay leaves.
- Stir and allow to boil until reduced by about half.
