Ingredients
  • 1 (9-inch) Double crust pastry
  • 3/4 cup sugar
  • 2 Tablespoons all-purpose flour
  • 1 teaspoon grated lemon rind
  • 1/2 teaspoon ground cinnamon, more or less to taste
  • Pinch of salt
  • 5 medium Granny Smith or Jonathan apples, peeled, cored, and thinly sliced
  • 2 Tablespoons butter
  • 1 egg white, slightly beaten

Directions
  1. Preheat oven to 450-degrees F.
  2. Line a 9-inch pie plate with half the pastry.
  3. Combine sugar, flour, lemon rind, cinnamon and salt; stir well.
  4. Sprinkle one-third of mixture into pastry shell.
  5. Top with apple slices.
  6. Sprinkle remaining sugar mixture over apples, dot with butter.
  7. Cover with top crust, and slit in several places to allow steam to escape; seal and flute edges.
  8. Brush pastry lightly with beaten egg white.
  9. Bake at 450-degrees for 10 minutes; reduce heat to 375-degrees, and bake an additional 30 minutes.
